I was busy snow shoveling, made vegan celery root soup, tacos with no-tuna salad, millet pudding and raw cranberry apple sauce. I still have to bake a marble cake for tomorrow.

I have Karen's Mums cake in the TMX at the moment. I will be baking it tonight as it's a bit warm here today again. Hopefully a bit more as the day goes on. Things to put in the freezer ready for baking when it is cooler.
May all dairy items in your fridge be of questionable vintage.

I am doing some Xmas gift cooking!

Yesterday I made the Shortbread from the EDC (so easy) and the Macadamia Parmasan Shortbread Wafers (lovely) from the Xmas book I think.  Will probably make more of each of these, although did double batches of each.

Today just have my second double batch in Kermie for Chocolate Salami. Making 5 batches in all, one will be with gluten free biscuits for a friend at work. So each batch I am making two logs and people will get one as small gifts, and some others will get with shortbread and fudge (still to make!) and wine etc.

I bought some cute colourful small metal buckets in the $2 type shop today, so planning to put shortbread etc in the Santa cellophane bags I bought yesterday and into the budget with the salami.

Going to make rum and raisin fudge soon - using a recipe from Taste and hoping I can convert to TM ok. Should be easy if I follow the timing and temp from the salami for melting the choc etc.

Lucky I am giving all this away. Must have a lot of fat in my kitchen today!!

Wish we could get some of that snow over here - going to be in the 30's for a few days -arghhh

You are going great guns there Jojo.  Can you please tell me how thinly you have to roll out those macadamia parmesan wafer thingys (obviously wafer thin?), how big was the cutter you used and how many does a batch make.  I wish they would put this information in the recipe books.

I got my thermomix yesterday and have been taking it for a test run ever since. So far we have tried mango sorbet, creme brulee, pasta fagioli, beetroot salad, sundried tomato & capsicum dip, vanilla and chocolate milkshakes & mixed berry smoothies. Consequently my stomach is so full that I have to rest for a few hours to make space for some dinner. Its ravioli tonight with a bolognese sauce!

Yes it is so annoying that this information isn't in the book. I did a double recipe as quantities didn't seem like a lot. I got 23 out of that, but I don't think I rolled them out as thinly as they should be. In saying that though, too thin and I think they would crumble as they are rather delicate. I am thinking these will be to take to mum and in-laws in tupperware rather than attempt to keep intact for gifts.

The mixture definitely gets warm and not as workable as you continue with rolling out the mixture after each round of cutting. I used a small glass to cut, about 5cm diameter. They did spread a bit on the tray too, so don't have too close together. Mine would have averaged about 3mm thick perhaps before cooking.

They have a lovely flavour though and look and taste great. Just not quite as wafer-y as the picture I saw somewhere! Looking forward to having a couple with a glass of wine later... oops, am I meant to save them for Xmas!

Last batch of salami just finished  :)

OK, thanks for that information Jo.  So if I roll them out to 2mm thickness, that would be ideal??  I think we need to ask Tenina to make sure these details are on all future recipes.

Well done - the full stomach is a constant problem with new machines - maybe there should be a health warning !!!

OMG Pandateddy - that is an amazing first day!! Lots of things there I haven't tried...

Well my first batch of fudge is done and cooling. If it sets well and tastes as good as it should, I will post the recipe with how I did in TM. Now off to do a second batch!

WOW! Everyone has been super busy today! Good job! Particulary Jojo and Pandateddy!!
