JD to the rescue again!   Looks like I should be thanking Gert and not Cookie for the delicious fruit mince recipe.    I'm sure Gert wouldn't mind including Cookie in the 'marriage made in heaven' with Andi.   Thanks Gert.

That's fine. Did you use the one called 'Nan's fruit mince" that has cider and apples in it?  If so that is mine. We love it-no fat.
May all dairy items in your fridge be of questionable vintage.

     Yes Cookie, it was terrific.    It was a bit runny when I had finished cooking it,  but thickened up in the fridge over night.It made about 1 k.  which was good for Andi's recipe which called for 800g.    I froze the remainder.  Thanks again.

I was trying to cook Pavlova and creme brulee but both stuffed up so I have sat my bum down in the loungeroom and am eating chocolate instead. I did make the choc cake out of the edc book yesterday and melted a block of cadburys dairy milk choc in the thermomixer and poured it on top for the icing. That was pretty yummy!

      At a recent cooking demo for T.M someone complained about the creme brulee recipe in the EDC book.   The demonstrator said to finish it off in the oven   I suppose she meant in a water bath.

I am supposed to prepare a large schaum torte (I think you call it pavlova) for friends who are entertaining a few people this evening but we had a bit of unscheduled rain during the night and now the humidity is too high to get a good result for a large meringue structure. 
They want it in the shape of a yule log - I've done them before with no problems - as this is traditional in the part of Austria from whence they hail. 
I'm going to try putting it into the dehydrator after it has baked, without the usual cool-down in the oven.  Hopefully, this will work and I will not have wasted eighteen egg whites. 
Meanwhile, I have to figure out what to prepare that will use up all these yolks.  I've already made all the cookies/biscuits I planed for and other than another batch of panettone and some custard, have no ready ideas. 

I did finally use some of the wattleseed I ordered from Australia.  I made a batch of cookies that included rolled oats and coconut and a small amount of lime juice plus other "usual" ingredients and they are delicious. Even my housekeeper, who does not care for sweets, tried one and pronounced it very good.  She is a coffee fiend and the coffee-like flavor was the thing that she noticed most. 
Now that I know how it works in this recipe, it gives me some ideas on how to use it in others. 
I gave my friend some to play with in his next batch of ale, so will probably be "forced" to order some more fairly soon.  This stuff might be addictive!

Made a heap of dips - tzatziki, hoummus, pesto etc for a work party.  Made sweet potato pancakes for dinner using Bimby to grate and partly cook the mix before finishing off in the frypan.
Beetroot and chocolate cakes for the party.

think that was all?

Andie - we don't seem to do yule logs here very much.  I think I posted a pic of my "mock" log made by snadwiching biscuits together with choc/marmalade cream filling and then choc cream coating?

My assistant's father is voer from Singapore and he made the rolled sponge cake version for our party today.

The one I am preparing is really a "mock" yule log.   A real one is a regular cake - usually a yellow cake with chocolate frosting but there are numerous variations.

The schaum torte version is just a meringue shaped like a log with one "branch"  and when it is ready to be filled, I try to get the top off in one piece (not successful this time - it was in three pieces but fixable) so the filling can be placed inside.  I piped on some pastry cream to cover the breaks (like a drift of snow) and decorated it with rosemary sprigs from my garden.   My friend was anxiously awaiting it while I finished it so I did not have time to take pictures.  Maybe next time.

Did a heap of dips, Chookie's lemon flourless cake, the icecream torta from the calendar, more Christmas shortbread, more $250 cookies, cooked eggs, potatoes etc for salads tomorrow.  I don't know how I managed before Termite. I thought I had used it last year but this year it hasn't stopped.

The icecream torta from the calendar says to put it in a 13cm springform tin. I've put it into a 23cm one. I think this may have been a misprint. Has anyone else tried it?
May all dairy items in your fridge be of questionable vintage.

Think it may be a misprint cookie1 - without my glasses on it looked like 23cm !!!  :-)) :-))  The recipe was originally from Tenina's blog so have left a comment there.

I hit the fishmongers at 0700 this morning, followed by the supermarket and then the greengrocers - all done now and it's only 1030!!  Today I'll be making the Crunchie Icecream Slice from the EDC, the Torte Caprese, Xmas shortbread, mince pies and dips.
then i will lie down for a while!! ;D
