I love all these new fancy shaped tins we can buy for baking - I saw some today but didn't succumb to the pressure to buy any.  They look lovely Michele.

MJ I would be interested to know which recipe you use for your twice cooked pork belly, I've been using the recipe from Tenina's Christmas book and we love it but always on the look out for a good pork belly recipe.
Wonder, I forgot about Teninas recipe. I just made it up. The pork I had was minus skin, so I wasn't go to bake it in a hot oven for crackling.
I made an Asian inspired stock with water, star anise, cardamom seeds, soy sauce, brown sugar, sherry and a tsp of miso granules. Simmer the pork for 10 minutes or so and let cool in stock if time. Strain stock and reserve. Place ribs into baking dish and coat with a mixture of hoisin and tomato sauce with a touch of soy. Bake until tender. Reduce stock and use as a sauce for stir fry Vegies and noodles.
The meal was superb!

Have you used any recipes from her Christmas book? I found there were a lot of Crio Brü ones now that she's an ambassador for them.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I've been drooling over some of the photos you ladies have posted :D

I made a bacon/mushroom/silverbeet risotto last night and this morning I whipped up some Banana and Honey muffins :)
Have to put some thought into dinner for tonight!

I've just converted a recipe for Pagnotta from the WW Italian Cookbook and it is super!  3 slices with vegemite for my lunch and I will do it for Mothers' Day seeing as the theme is Italian.  It has a nice crunchy crust - will post the recipe later.
