I tried a couple of recipes from Dan lepard today - made the toll house Choc chip cookies and weetbix muffins with blueberries .  The weetbix muffins are quite healthy so great for lunchboxes nd luckily both kids seem to like them.

Lovely looking muffins. Is the recipe on here?

I've done some experimental stuff today. Trying my hand at my own jerky. Beef is currently marinating and I'll be putting it in the dehydrater tomorrow. Also picked up some maple extract from Aldi the other day so tried making maple flavoured syrup. I'm really happy with the result.

Less experimental..... I made some tikka paste to use up some coriander from the garden. This was one of the first things I made when I first got my TMX and I remember it taking so much longer as I painstakingly measured the weight of every single ingredient! It's amazing how confident we become with just 'chucking things in' after a while!

Thank you!  I'd seen the recipe before but was checking that it was the same one you'd used.

I have no need to cook today (until dinner time) so thought I might try to convert a recipe and browse through Dan Lepard's Short and Sweet.

Came across chocolate custard muffins.  P183. Now any cake that starts with making custard over a stove and whisking constantly is perfect for a conversion. So now I am contemplating trying it with rice flour instead of plain flour so it is a gluten free option for my little boy's birthday party next month.

Would that be a straight swap?

I don't think a straight swap will work. You will need to add something else to replace the gluten in the wheat.  Try adding guar or xanthum gum with the rice flour. Even better would be a blend of 1/3 potato flour, 1/3 buckwheat flout and 1/3 tapioca flour with a couple of table spoons of guar or xantum gum.

Nothing here. Been out too much. DH is keeping us in bread as he is experimenting trying to do a perfect loaf we can cook on the gas burner while we are away. He hasn't mastered it yet, we scrape the black off and eat the rest.  :-\ :-\

What about a steamed loaf like we do in the varoma Cookie - do you have a gas cooker that can boil water?  Well, guess you have to have that facility, how could you survive without tea or coffee  ;D

Cookie, what if you use a heat diffuser to keep the bottom of the camp oven from getting too hot?
