Rum, Raisin and a banana recipe made 20 muffins.  Baked in 20 minutes.

A busy day today. Quirky Jo's Chia pudding, chicken and brown rice soup and coconut chicken soup and about to make more chia and quinoa flat breads. Also 2 loaves of bread, pizza rolls using a focaccia base and some lemon muffins plus a loaded cauliflower casserole.

Cookie, I just cook it up with some palm sugar and usually have it cold with a little coconut milk as a dessert,

I cooked a chook tonight - any way I can use the carcass and juices that came from it as a base for chicken stock? TIA everyone  :D

Thanks everyone - I am exhausted I have to say.  Its not just the cooking its wrapping and putting it all away for school lunch's!! Nice to have things in the house now though - problem is that it doesn't last very long :)

Astarra,  I always save the carcass from the roasted chook to make stock.  Sometimes in the TMX but more often on the stove.  If it is a bought chook, I add the carcass and stuffing all covered with water,  simmer for a couple of hours and then strain through a chux.  If no stuffing, I add ginger and garlic.  This makes a Chinese type stock.

After looking at what you have all been doing I have the guilts as I have been busy at work and haven't cooked much lately  :(

Today I'll be cooking anything that uses lots of eggs. Despite giving eggs to friends, neighbours and even the hairdresser, I still have 3 dozen eggs in the fridge. The 4 chookies are laying 4 eggs a day, every day. And no wonder-the neighbour cooks extra rice for them and they beg for food (and get it) from passers by at the back fence :D
