Hazarding a guess: Normally the cake tin sides heats up the wet cake mix and would cook on the outside perimeter of the cake before the middle which in turn rises with the extra time because it's not cooked thru. By wetting the towel the outside of the tin is not heated up as quickly allowing the outside perimeter mix to cook at the same time as the middle and therefore it rises at exactly the same time...correct me if I'm wrong  :D
Yep exactly right CP. The cakes take a little longer to cook as they cook slower. Mine needed 10 minutes longer than normally.

Here's what I turned Thursday's chocolate cakes into. I don't get to make many girly cakes and jumped at the chance to do a monster high doll cake for a friends little girl.  Remember the Dolly Varden cakes from ages ago. This is like a pimped up version!

Fabulous cake Kimmy!!

I was lucky enough to get 5kg of cherries at the Farmer's Markets this morning for only $10!!  So today I am cooking with cherries …..
bottling some, cherry and cointreau jam and browned butter cherry tart (FFS).

Also making isi's pasta bake to use up some leftover chicken as well as lots of fresh veggies from the garden.

I also made a paleo (GF) savoury loaf from a recipe my cousin gave me, with grated zucchini, olives, parmesan, ham, parsley and pepitas.  If it turns out nice I will post the recipe.

Lucky you Karen.  :D

Kimmy, love the cake, every little girls dream. You've done an amazing job.
I remember having a traditional Dolly Varden cake for my 7th birthday, Barbie Doll in a pink piped dress - it was the sixties though.

Nice cake Kimmy, any little girl would love that :)

Karen, that savoury loaf sounds interesting.  My friend has just started the paleo diet and is cooking some nice meals.

A great buy Karen. Well done. Kimmy the doll cake is lovely. Like Mich I had Dolly Varden doll cakes when I was growing up. My Mum used to send to Perth for them and they would come up all beautiful. I actually have a Dolly Varden cake it.

Kimmy that cake looks fantastic.  I used to make fairy cakes for my girls, not as intricate as yours but they were impressed.
Karen, cherries sound great and please post if  savoury loaf is any good .
I confit'ed a big amount of garlic ( nice to get local) then made a baba ganoush and capsicum and sundried tomato dip and a ragu. Nothing very exciting in our house ATM.
