Yesterday, made a massive Vegetarian Lasagna.  We had some for dinner and DD will have the rest.

Made 24 Apple and choc chip muffins.  Based on RTE recipe but converted to TMX.  Lovely

Only dinner here today. I had an appointment with  my eye specialist this morning and this afternoon I plan to clean up a bit when DH wakes from his Nanna nap.
May all dairy items in your fridge be of questionable vintage.

I haven’t got time to cook so I bought up a few ready meals at Costco yesterday as the kids were coming in today to do a few things for me.  Butter chicken and fried rice went down nicely with them.

Good idea , Judy when short of time.
Will have to make more Muffins today.  2 dozen all gone. Should post the recipe as they were delicious.

Those muffins look nice Chookie.

Judy, we had some ready made frozen meals when I had just come home from hospital.  They were very handy.

I thought very seriously about it but I had book club and then I knew I would eat the leftover ones.
No cooking here today, I had a friend come over.

Made Banana and honey muffins.  Nice and simple but not as nice as the Apple RTE recipe.  Tried a new method with these. Creamed butter and sugar, added egg then milk. Then added 1/4 apples. Zapped all. ( it diced the apple) . Then mixed with flour and carb soda and a couple of handfuls of choc chips. Made double mixture. I have made 60 muffins in the last 2 days.  Most given away.  Great to be able to use some of the Apples.

Would love your apple and choc chip muffin recipe, when you have time, Chookie.  Now that I have (I hope) a decent cooker up in Guildford I hope to do some more baking ... particularly whilst the builders are here so that DH and I can have one or two and give the rest to the builders ... particularly the young apprentice who has so far been very enthusiastic about any offerings I have give them (it's great to have an appreciative body to feed!)
