Having friends from Brisbane tomorrow for lunch so have been busy today getting the meal ready so that I will have more time to sit and chat with them.
Have done the Olive Oil Dinner Rolls from the UK Thermomix site, Nico's Thai Chilli Chicken, Farfallina's Easy Light Pilaf and Chookie's Macadamia & Honey Tart. Only thing left to do tomorrow will be to steam some extra vegies and if they take up my offer of an alternative dessert, will whip up either the caramel custard or the strawberry ice-cream if needed.  Off to set the table then knocking off for the day.

Not a lot happening here in the way of cooking. Made Chicken Noodle soup from Steph's blog last night. It was very tasty.  Tonight I plan to do Roxy's Honey Chicken with some sort of polenta dish.
May all dairy items in your fridge be of questionable vintage.

You have been busy jd, lucky friends to be the recipient of such wonderful food.I would go for Chookie's tart if I had a choice of dessert ;)

It certainly is impressive for guests Cornish Cream.  I've made the caramel custards and put them in stemmed serving dishes, was going to do it hot when needed but changed my mind - it is just as delicious cold.  Funny, desserts used to be my biggest problem when entertaining but now it is the easiest.

Made latte then a very yummy mango omelet for breakfast, after being given a crate of ripe mangos.  It's a little bit rich for me (I'd probably use milk rather than cream next time and less butter) but DD1 adores it.

Here's the recipe:

4 eggs
2 tbsp. whipping cream
1 tbsp. sugar
3 tbsp. butter
2 large mangos, cut in chunks
1/2 tsp. salt

Beat the eggs, cream, sugar and salt together in TMX speed 3 for roughly 15 seconds.  Meanwhile melt butter in frying pan, tilting to coat sides as well as base.  Pour mix into pan and cook over medium heat, lifting sides to allow uncooked egg to run onto bottom of pan.  When top is lightly set, add the mango.  Cook for further 30 secs then fold and slide onto serving plate. 

It's supposed to serve 2, but it would serve 3 in our household.

Wow, that sounds yummy caroline - you should put that in breakfasts!  I put my fruit pizza recipe there because we have it for breaky, and it's similar - a fruit and egg recipe - sounds strange but it's delicious!

Last night we had pizza for dinner.  Used a combination of ideas based on what we had available, including zucchini and fetta cheese mix inspired by "Chef Laurent Caters for Families".  I thought it was a little risky, but as long as the zucchini is cooked enough, it has little taste.  Kids devoured it, and dh declared it as delicious.

Making "Snails" at the moment, will post review later.

Today is the first chance I've had to get in the kitchen and restock cakes, biscuits & rolls.
By lunchtime I'd made:
Coffee & White Chocolate biscuits.
Lime & Coconut Cake
Cheese and Ham rolls
Bimby Chocolate Cake
Bacon & Onion Muffins

I love my Bimby  ;D

Phew, you have been busy Jan.
The freezer is feeding us tonight as we had a car rally. Most of it will be TMX, we'll simply select what we want.

That should keep them going for a day or two VHJ, well done.

We are having a very social couple of weeks so not much cooking going on around here.   Tonight for tea I made fried rice from the leftover batch of rice pilaf, just adding onion, bacon,strips of omelette & soy sauce - was delicious.

I made Nico's Thai Chili Chicken for supper this evening ( thanks jd for pointing me to that recipe this week).My DS and I thoroughly enjoyed it but DH informed me that he's not that keen on coconut milk, another recipe to the wall. :(
Made Isi's easy Portuguese rolls but I turned the dough into a loaf.Scrumptious.

Cornish Cream my DH doesn't like cocnut milk and he can taste even a tiny bit of it. I'm mean and still use it occasionally. :P We're actually having beef rendang tonight so he will have to eat it. 8)

Cornish Cream my DH doesn't like coconut milk and he can taste even a tiny bit of it. I'm mean and still use it occasionally. :P We're actually having beef rendang tonight so he will have to eat it. 8)

Cookie I usually sneak a recipe in that my DH isn't keen on when we have guests for supper.The Thai Chili Chicken will be one of those recipes. ;) Never cooked Beef Rendang what's in it?

When we were eating it DD informed me it was nice but not a true Rendang.
It has chilli, shrimp paste, ginger, garlic, onion, oil and tumeric powder in the paste. Then bay leaves, cinnamon, ground cloves, coconut milk,palm sugar, seasoning, grated coconut (I left this out) and beef.  I cooked mine for a bit longer than the 60 minutes as I wanted the meat to be almost falling apart. We have a bit of liquid left so tonight I am going to add some paneer to it and have it as a side dish.

We also had CP63's rhubarb cake and custard with it.
