this morning the kids requested pancakes and syrup for breakie - but i had no more gluten free flour left, so i had to make that (4 batches lol) but to make that i needed cornflour (from corn) and had none of that left either so had to grind up a kilo of polenta first LOL

it's taken a while to get these pancakes made!!

LOL Brunch is a good thing...often happens in this house on a Sunday  :)

So far today have made two loaves of bread (I do this everyday), two batches of Luigi cookies and potato and leek soup for lunch. I am about to make a broccoli and almond soup - mega calcium soup! - to take to my parents' house for dinner.

I've been disappointed with the pizzas I've made - more like bread with pizza toppings on.  Any idea where I'm going wrong?


In Italy, many pizzas are like bread with pizza toppings.  It may be worth trying to really make the base very thin and bake quickly before it has much time to prove after shaping and then topping.

Let us know what you are doing / what recipe you are following.

Caroline, I divide mine into 4 balls (or pizza bases) and don't usually give it much time to rise the second time.  Once rolled out I don't let it rise again either - just top it and into the oven. 

The older versions of the Aussie Everyday Cookbook didn't have enough oil.  I think from memory (with out checking cos I'm lazy) said 20g of olive, however I had been told to increase this to 40g.

That's fine. I should re-phrase that.  I'm not too lazy, just too tired  ;) :) But have now checked for you, I don't have the latest version of the everyday cookbook to see if it has been amended or not, but the 2 previous ones do have 20g, so the 40 adjustment should help you.  ;D

And it is a school night - well work...
She's good thanks JD. It's been a tough weekend for her but I'll PM you with that one. Poor little tacker. So she's asleep in my bed at the moment.  I'm sure most parents feel like they're about to explode with the love you have for your own children.  And I always feel that bit more complete when she's home with me.  :)

Still eating leftovers today but I have made a batch of bolognaise sauce for the freezer and some chicken and asparagus soup for tomorrow.
