Chicken Cordon Bleu (with photo)

I've got this recipe form cookaround. I made it several times and it's just great!

It's like those frozen or ready ones you buy from the market. Even better cos there aren't any addictives. Another surplus is that they are cooked in the oven and not fried.

With this recipe I make 6 Cordon Bleu. For me it would be enough for 6 people. It surely depends on how hungry these people are! :)

Chicken Cordon Bleu:

Ingredients:
100g parmesan (cut into chunks)
500g chicken breast (cut into small chunks)
1 egg
20g flour
5g salt

6 slices of ham (I used turkey ham)
6 slices of Swiss cheese (I used sottilette cheese)

to coat with:
1 egg (beaten)
Bread crumbs
EVO


Preparation:

Grate parmesan for 15 seconds speeding up from 2 to 9. Set aside
Put chopped chicken in TM bowl, proceed for 30 seconds on Speed 4
Add grated parmesan, egg, flour and salt. Proceed for 30 seconds on Speed 4
Divide into 12 pieces. Roll each out approx 10cm diameter by your hands (Wet your hands with water to work better)
Place ham and cheese on one piece and close it over with another one. This way you will have 6 cordon bleu at the end. While closing stick the sides nicely so the cheese wouldn’t come out during baking
Cover oven tray with wax paper. Brush it over with some oil
Soak your Cordon Bleu first into beaten egg and then bread crumbs. Place them in the tray
Pour very little oil on the top of your Cordon Bleu
Cook in the 180°C preheated oven for 25-30 minutes. (After 15 minutes passed, turn them upside down and continue to cook for another 10-15 minutes)

Tips/Hints:
In original recipe it comes out 5 Cordon Bleu. I always make 6.
In original recipe 2 eggs are used to coat with. For me 1 is enough

What a fabulous idea!!!  :D Thanks for your recipes. My kids were just looking over my shoulder while I was looking at that one and will now keep on me to make them!  :)

I believe they would like. Check out also the recipe named as Chicken Meatballs with Corn Flakes that I posted some days back. I believe the kids would also like that one:)

Made these for dinner tonight & what a WINNER. They are really tasty & very easy. Thank you for a fabulous recipe Farfallina. Sorry there is no photo- my boys don't finish swimming until 7pm so they are ravenous by the time they get home and it's dinner on plates & eat. I'd probably lose a hand if I tried to take a photo before they got it  ;D ;D ;D

Great work farfallina.  This was a very popular recipe for entertaining guests many years ago and your were judged by your abilities to make this and veal foyot (?) for a crowd.  Making sure the cheese didn't ooze out was always a challenge.

I made this several times. Each time cheese in 1 of them came out. Why always only one dunno. They would judge my cooking as very stable I guess :)

I can't wait to try these. There are so many recipes in the mains section that I haven't read I think my menu planning is done for the next couple of weeks.

I made these today, doubling the recipe so that we will have enough for a picnic tomorrow. I added some chopped spring onion to the chicken in the TMX. Perverse it may sound, but these are great with Thai chili sauce :P

Thanks Farfallina, I made these last night and they were a big hit!  I never would have bothered making these myself in the past (too easy to just pick them up at the chicken shop), but these were so quick, and it's wonderful and very satisfying knowing exactly what has gone into them.  I used mozzarella as that was all I had, and also only had one leaky one  :)

Yes Berry, it was what i did exactly for many years. I used to buy it in supermarket, frozen or not. It is nice to know there isn't anything addittive inside and you can fill them as you wish
Leaky one? So far I've always managed to have one  :o  :)  :D
