I can't see why not ELH05, just reduce the cooking time as white rice cooks faster than brown. :)

I made this last week and it is quite tasty! Thanks for posting Jo.

As for using white rice, I think it will give it a different texture so it won't be as creamy....but I could be wrong.

I haven't made this for a while but will be cranking up soup production now that the weather has turned cooler. If I can remember, the brown rice gives it a certain nutty flavour.

Well I made this soup last night and did it with white rice instead.  Other things I did differently was I didnt have celery so just used about the same amount of green capsicum and used the TMX vege stock concentrate.

Still ended up with a beautiful, thick, creamy hearty soup!  Really enjoyed it so its got me thinking what it could taste like with the brown rice.

Really good !!

5/5

Quick question: Could all the brown rice be ground up?

Droverjess, you sure could grind up all the rice - I do when I'm in a hurry for it to cook - reduces the cooking time by about half. I also often bulk it out with veges steaming on top in the Varoma - see my recipe on my blog for details and pics, as I've updated it. :)

I've made this a few times now but tonights was the best ever!! I didn't have any peas so sliced up some runner beans and used them instead.  This is my ALL time favourite soup recipe, have thanked you before Jo but I'm doing it again.  Delish!

I'm really glad this got bumped up yesterday.  I hadn't seen it before, but made it tonight for dinner and it was a HIT.  Even my non-soup-eating kids ate it and loved it.
Served it with fresh Vienna loaf.

Oh my goodness this soup is so delicious!  I used cashews instead of almonds.  I  could eat this every day!  Might try grinding all the rice sometime, just to see how that works out too.  A huge Thank You Jo!

Made this for dinner tonight. Very very nice! I did use cashews instead of almond. DD has not been eating much last days save for fruit. She happily as this tonight after a tentative bite! So thank you! It's such a nourishing meal that even half a kid's sized bowl is plenty in my opinion.
