CC, this may help with the proving in the cold weather. Shower cap on top, float in sink of warm water.

I notice that the recipe is pretty much the same as the Sandwich Bread in the TM5 basic chip. I will have to try rolls  next time I make it.

Dot,  this recipe can be made into rolls,  bread sticks or  a loaf.  Be generous with the yeast measurement and I have been adding an extra 20 mils of water.   You can replace some of the white flour with seeds or a different flour such as Rye or wholemeal. It is also a good base for a fruit loaf.
Yesterday my GS made it, with a great deal of handling, into 6 rolls and 3 bread sticks. This was with 1 1/2 times the mixture. I sometimes make 1/2 the mixture into small rolls and bake them in the AF.
When I got my TMX 31 about 5 years ago,  I contacted TMX Australia to complain about the quality of the bread they provided at the Demos. The main issue was the single rise they used. It was a time management issue with them.  I hope they have changed the method,  but I haven't checked as there many excellent bread recipes on the. forum.
I hope you enjoy your bread making.

Dot I use this as the basis for our everyday bread. As Chookie said you can add anything you like. A couple of our favourites are replacing 100g of the flour with either spelt flour or rye. Another is adding lots of toasted seeds. The seeds don't have to be toasted though.
Have fun.
