Thanks Frozzie for a very clear description of what you did.  Yes it is the same as what I do ,  but yours look much better. ;D My trays are very heavy and flatten them a bit too much.  You have inspired me to have another go with lighter trays.

Made the No Fuss Bread today. First round was a disaster. The dough was crumbly after kneading. Couldn't figure out the problem until I started making up a new dough. Made a mistake with the water - 200 ml instead of 300 ml! By then I had thrown away the first lot.

Ingredients as per Chookie's recipe. Only tweak: 1 tsp bread improver and 15 g butter.

1st rise 1.5 hours
Intermediate rise before final shaping 30 mins
2nd rise 1.5 hours

The final result is not as spread out as Chookie's bread :(

BZB,  these look very good.  If you warm the tin slightly before you put the loaf in,  then you will get a  fuller rise.  Just need a bit more confidence with the slashing.

DH & I made this today and it turned out great.  We have frozen half and just about to have some with scramble eggs for tea.

KMW, pleased you are enjoying this recipe.   I have just made it and created an Olive and Rosemary loaf.  I made bread as normal up to second rise and left it in the bowl.  I put it back on the machine and added 1  1/4 cups of sliced olives and 3 tips of fresh Rosemary that had been cut into small bits and cooked in 1 tablespoon of olive oil.  All  added to bowl and kneaded again for 45 seconds. Bake as normal.   This bread freezes well and reheats well. Have fun with the recipe.

Olive & Rosemary Loaf yum. Once we have made this a few times we will have to experiment. Thanks to guidance on the forum I have graduate from disaster to bread I would serve to guests 😄
