It was really nice, I made some tweaks as per the comments on the recipe, added cumin powder and a little chilli powder, easy to make on those lazy days

We had spag bog from the freezer. I was out until about 1 and picked up the ingredients to make Mich's SC casserole. Then I remembered that we will be out all day tomorrow at the Caravan and Camping show so the SC dish is for tomorrow's dinner.

Last night - roast lamb dinner
tonight - pork chops, mash, veges & zucchinni slice (DH just texted to say he is bringing home a whole pig for the freezer tonight)

I made some cheesy meatballs with garlic croutons for DH which he really enjoyed. Next time I would make into crumbs instead of the croutons and not use as much bread (sourdough) as there was too much. The bit that was added (softnened with milk) to the meatballs though made them lovely and moist.

Last night I had taken a chicken breast out for dinner. It turned out to be quite a small one and I was worried it wouldn't feed the 3 of us. I hammered it out very thinly, put Cheese slices on it and bacon over the cheese. I held them on with tooth picks. I then cooked it quickly in the frying pan. It was very tasty and we even had leftovers of the chicken. I served it with vegetables.
