Corned beef tonight. The Pear and Nut salad was a big success last night as was the Beetroot Dip.
May all dairy items in your fridge be of questionable vintage.

I'm having a TM free day today!  :o  My DH has his works bbq late this arvo so dinner is taken care of, so I made a very light lunch for us instead, crab cakes with mango sambal. Was okay, nothing thrilling.  :)

Well it certainly looks nice Julie.  Would love the recipe for the mango sambal please or do we already have it somewhere?

It just wasn't flavoursome enough for me, though DH really enjoyed it.  :)

Here's the sambal recipe, it's from the KitchenAid Ultimate Mixer Cookbook.

Sambal
½ ripe mango
1 ripe avocado
1 spring onion, finely chopped
1 red chilli, seeds removed and finely chopped
1 tsp Thai fish sauce
2 tblsp lime juice
½ tsp sugar
1 tblsp finely chopped fresh coriander
2 tsp finely chopped fresh parsley

Chop the mango and avocado into 6mm dice then add the remaining ingredients and mix well.  Set aside until needed.



Judy, I also have a similar recipe that I prefer more, it goes wonderfully with crumbed prawns.

Mango Salsa
1 ripe mango, cut into small cubes
1 avocado, finely chopped
1 red capsicum, finely chopped
½ red onion, finely chopped
1 tblsp fresh lime juice
1 tblsp finely shredded fresh mint (or sprinkle of dry)

Combine all ingredients in a bowl.  Season with salt & pepper.

Focaccia was going to be with our sausage casserole but not to be.

Was making focaccia (EDC) and make a big OOPS. Wrapped the dough in thermomat and left it on table near gas heater to rise. It has dropped everywhere and is a complete mess. What do u put it in to rise the first time?

Feeling like a complete failure   :'(

I always leave my dough in the TM bowl for the first rise DG.  I'm lucky I have 2 bowls so that I can get on with more cooking with the second one.

DG, did you do the one from the EDC?  If so, have a read of this and see if it helps. I don't think I have made a foccacia myself.
