Last night we had a recipe from Diabetic Magazine. Some of their recipes are quite good. They always have heaps of veggies in and some carbohydrate as well as protein. This particular meal served 3 and there was so much of it the three of us had seconds and still didn't finish it. I do muck around with them a bit, like adding vegie stock or less liquid. Not with the content though.

Last night we had Chicken thighs baked on a bed of mushrooms and red Capsicum and chilli flakes with Spinach from the garden.
Tonight grilled Salmon with Pepper and Sage Risotto,(posted), and salad.

The dinners all sound wonderful.
I'm debating whether or not to put the TMX away. I really don't use it. Took it away at Christmas with grand plans and only cooked 1 risotto in it. I haven't cooked anything since. If I don't use it within 6 months sell it. I could meal plan around it but my cooking has been off for at least 2 years now and I'm sick of wasting ingredients.

Michele, that is not good. If you put it away you are even less likely to use it. I find I use mine more in the winter , making soup and steaming veggies , fish and chicken.
In the Summer I use it nearly every day, made protein balls and bread, sweet chilli sauce etc. Most is given away.
With your work and holidaying, it may be difficult for you to settle into a routine to use it.
If you could suggest what you would like to cook, maybe we could help you select a good recipe and work you through the recipe.
