Marina, we had a most amazing Eggplant dish at the Spanish restaurant. It was eggplant sliced very thin, probably on a mandolin and with a very thin layer of batter. The batter was probably shallow fried but there was no sign of oil. It then had thin threads of molasses over it.  It was the stand out dish , after the Prawns.
Last night DDIL cooked us Pizza for dinner. She also made Lamingtons with a filling of jam and a creamy mousse.

Those pizzas look good, Chookie.  I like the sound of that eggplant as well, a really unusual presentation.

Great cooking everyone .
We had Skinnymixers five spiced beef cheeks , sauce in TMX then slow cooker for 8 hours . Wow the meat was tender and just delicious.

Last night I split a chicken in 1/2 and placed baby capers and slices of lemon under it.  Roasted in oven for an hour.  Served with mix of wild  and brown rice , silverbeet and roasted tomato. The sauce from the capers and lemons was very tasty. I have to admit that the rice was one of those precooked packets that you heat in the microwave for 90 seconds. Leftovers tonight. Might make a Hunza Pie to go with the chicken.

That rice is much quicker and easier to use Chookie, I use those brown rice tubs.

Judy, I don’t feel so guilty now.  I also bought some of the Brown rice Tubs.  One does us both a meal. They are also good for fried rice base.
Still have some chicken breast leftover.  Might make Coronation Chicken.

I don’t feel guilty these days at all if I take short cuts, most single people do. A tub does me 2 meals as well Chookie. I haven’t used them for fried rice, thanks for the heads up on that info.

KAtie I have never had beef cheeks, possibly because of what they are. :D

Tonight we are having Peri Peri chicken strips I bought from Coles. They are  made by Mt Barker chicken people who are free range. I didn't know what to serve with them so have decided to take a leaf out of Astarra's book and make some savoury muffins for the carbs part of our meal. The rest will either be salad or a few vegies.
