Beef casserole and DH  created a Potato dish again and we had broccoli as well

Made fish cakes from a Nigel Slatter recipe. Very simple but good. Equal amounts of mashed potato and white fish simmered in milk with bay leaves, pepper corns and parsley. Added dill. Used ice cream scoop to form balls, egg and pinko then spray well with oil and brown in AF.

It has been difficult to find interesting things to cook with Ral on low fibre, high protein diet. Last night we had chicken broth with  noodles and chicken. I Made Ral and a neighbour some Easter buns without the fruit, just spices and choc chips.

Tonight will be some type of chicken dish.

I usually have my main meal for lunch so tonight I peeled 6 tiger prawns and was going to make a prawn cocktail.  I didn’t get that far, tried a prawn and couldn’t eat it so I took the rest of them over to a neighbour and just had a bit of salad instead.

Judy, shame about the prawns. Was it the texture that was the problem. ?
Last night DD and DS had dinner with me. We ordered in fish from the local shop and DS and I made pumpkin and potato SD potato cakes. DD made a salad.
