It was lovely Marina. Tonight is a Mexican chilli mince with cheesy corn bread on the top. I’m steaming some veggies to h ave with it.
May all dairy items in your fridge be of questionable vintage.

I had the ‘chicken’ curry sauce with pasta tonight. I’ll get 6 such meals just from the leftover sauce from the SC recipe.

Judy, that looks very nice, something that I would be able to eat.

I made a Cordon Bleu Casserole for the men for dinner tonight.  Layers of shredded chicken, ham & swiss cheese  with a thin white sauce.  I also added some grated carrot & spinach in the layers and topped with crunchy bread crumbs.

Creamy seafood pasta a Skinnymixers recipe for prawns , I just used frozen seafood. So good . Aldi have the best frozen fish and marinara mix .

They all sound delicious. We are having roast beef with veggies. DD and DH have been carting mulch all day.

Judy, I choose soft foods by choice as I have difficulty swallowing.  My oesophagus doesn't work properly.  One end won't push the food down and the other end wants to push it back.  It's called oesophagul motility disorder, added to that I suffer with terrible reflux problems.   I can't eat hard food like steak, some chicken - depends how it is cooked, bread rolls, crusts, toast even some vegetables. Anything hard really.   Fish is fine as are eggs  and some pasta is ok occasionally.  I mainly eat vegetables these days.  Some nights I spend the night sitting up in bed.  I've tried all sorts of ideas to help.  I do have some medication but that doesn't always work.

Thanks for the explanation Margaret, I then read more about it on Google and I really feel for you with this disorder. I was pleased to read it isn’t life threatening but it’s just an awful thing to have to live with. I cannot eat the same things as you as well but for a completely different reason - you come to accept what you can and cannot eat and just get on with it don’t you? Your side effects are a lot worse than mine, I have always said there are a lot of people out there worse off than me and you are another one of those people.

 Having done a new inventory of my freezer I had serves of frittata and veggie timbales that I wanted to get rid of so, rather than throw them out (I didn’t want to eat them as they were), I blitzed some of each, added a spoon of garlic dip and some milk before heating my new soup. Tasted pretty good so will use up the rest and do it again tomorrow. I filled my mug twice with tonight’s lot.
