......and tasty it was!

Loved it, thanks Robyn  :-*
Stuck to the recipe, but used the whole red capsicum and added a 1/2 packet of baby spinach in for the last 3 minutes of cooking, and increased the chicken to 800gms.

Definitely recognise that food Maddy - glad you enjoyed it, actually we haven't had it here for months (it was made for so many years pre-thermie, now no time to make when the wonderful dishes not attempted abound).   :D  :D

We had it last night. I cooked the rice and then put it in the thermoserver. I cooked the chicken in the frypan (quirky family) while I did the sauce in the TMX. I reduced the cooking time for the sauce as it didn't have the chicken in.
It was really nice and we loved it.

Have you tried adding your diced chicken with 5 minutes cooking time to go Cookie?  I know your family are like mine and not keen on their chicken cooked in the thermomix with normal cooking times.  I have found however that when I add it with 5-6 minutes remaining it is beautifully cooked (I always check the largest piece) and not shredded or overcooked. It works with risottos, stews etc. Food for thought.  :)

Thanks for prompting my memory Chelsea - I always follow your suggestion posted earlier and altered my hard copy of this recipe as the shredding of chicken does not sit well with any diners in this part of the country either. I obviously forgot to put the same suggestion on this recipe.   :)  :)

That is great for you dede - but it does not appear that you have had any difficulty pleasing your wonderful family of 7 since thermie arrived.  They must hang out for the next wonderful cake or dessert.  :)  :)

They do enjoy most things I cook thats for sure. I have stopped buying any prepared snack foods now. I'm pretty lucky with my lot who love fruit and all enjoy drinking water. I refuse to send them to school with cordial and we seldom buy fizzy drinks. We do how every go through around 4 liters of milk a day. (we almost need a cow).
I do a lot of cooking thats for sure with so many hungry mouths to feed. (I cant beleive how much teenages eat)
I love when they all like something I make.
