Moo2, Fundj is correct, glucose is used to prevent the sugar from crystallising (going grainy) during boiling, however it is a successful end result without glucose. I discovered this when I have forgotten to put it in a couple of batches - the fudge is probably a little harder

Ah, thanks for the explanation. It explains why the Choc fudge I made was harder but still good.

I've just made a batch and my husband has declared it to be "the best fudge he's ever eaten". High praise indeed!
Just wondering what other variations people might have tried to get some different flavours - eg Baileys or other liqueur? peanut butter? butterscotch? caramel? dark chocolate and nuts?
I thought probably I could just add peanut butter/liqueur/dark choc/nuts at the end in place of the cookies...but would I still need the white choc? Could you substitute brown sugar or add some golden syrup to get caramel fudge instead?
Thanks in advance for any suggestions you're happy to share

I love this fudge too!! I love the original version but its fun to experiment. I have omitted the white chocolate and all the sugar and replaced with 70% dark choc and a teaspoon of peppermint essence, although next time I will make it two teaspoons of peppermint essence as it wasn't quite minty enough. Oh and I used the full packet of Oreos rather than half. Next time I was thinking of liqueur also as I have some Kalhua, for a coffee flavour and maybe another one with the butterscotch schnapps I have in the cupboard...

yum, I finally made a batch of this fudge - and I ate way to much. Instead of liquid glucose I used 1 tsp of powdered glucose (also known as dextrose, or Traubenzucker in German) - and is available from any Drogerie or Apotheke, in Switzerland.
Will definitely make these again, great recipe! Thanks Robyn.

So pleased you enjoyed this very moorish treat Cheryl - I have made this w'out glucose (simply because I forgot to add it and the resulting product has a slightly harder fudge, less caramel texture!!!!!)

This recipe is really soooooo good. I seriously recommend it. I would love to try other variations too so if anyone has had any successes please can they add them

Janey you can substitute either milk or dark choc instead of the white choc or use any combination of nuts instead of oreoes - it is so very moorish!!!!!
