Easy Mini Christmas PuddingsIngredients500g old fruit cake or a cheap one
100g chocolate melts
60ml brandy
2 tablespoons jam
150g white chocolate melts
red and green glace cherries for top, or icing tubes
Place the cake into the bowl and mix on speed 6/7 for about 5-10 seconds. You want it to come apart but not squishy. Keep an eye on it. Set aside
Place the chocolate melts into the bowl and melt at 50
0 for about a minute or 2 at speed 1. Add more time if your chocolate isn't melted.
Return cake to bowl and add brandy and jam.
Mix on speed 4 about 10-15 seconds.
This mixture then needs to be placed in the fridge for about 1 hour. It is probably best removed from the bowl.
After 1 hour, take about 1 teaspoon size balls of mix and roll them in your hand until smooth. Cool, dry hands are best for this.
If they are soft return to the fridge.
Melt the white chocolate at 50
0 for about 1-2 minutes at speed 1.
Put the white chocolate over the puddings to resemble custard. Place tiny bits of red and green cherry on to resemble holly.
Keep in the fridge.
TweakingThese can be coated completely in chocolate if you wish. I used red and green icing tubes for the red and green as I had an unexpected visitor and the white chocolate had set and wouldn't hold the cherries.
