Easy Mini Christmas Puddings with photo

Easy Mini Christmas Puddings
Ingredients
500g old fruit cake or a cheap one
100g chocolate melts
60ml brandy
2 tablespoons jam
150g white chocolate melts
red and green glace cherries for top, or icing tubes

Place the cake into the bowl and mix on speed 6/7 for about 5-10 seconds. You want it to come apart but not squishy. Keep an eye on it. Set aside
Place the chocolate melts into the bowl and melt at 500 for about a minute or 2 at speed 1. Add more time if your chocolate isn't melted.
Return cake to bowl and add brandy and jam.
Mix on speed 4 about 10-15 seconds.
This mixture then needs to be placed in the fridge for about 1 hour. It is probably best removed from the bowl.
After 1 hour, take about 1 teaspoon size balls of mix and roll them in your hand until smooth. Cool, dry hands are best for this.
If they are soft return to the fridge.
Melt the white chocolate at 500 for about 1-2 minutes at speed 1.
Put the white chocolate over the puddings to resemble custard. Place tiny bits of red and green cherry on to resemble holly.
Keep in the fridge.

Tweaking
These can be coated completely in chocolate if you wish. I used red and green icing tubes for the red and green as I had an unexpected visitor and the white chocolate had set and wouldn't hold the cherries.

They look lovely Cookie. The pudding is perfect for the festive season and I am thinking that mixture would also be perfect for those of us who have a cup-cake mold (purely for adults of course with the brandy in it) for occasions other than Christmas. What do you reckon maddy?

They look great cookie, I used to use this recipe for final week goodies for my students but after discovering Maddy's oreo pups I made these and they were a huge success. I generally use spearmint leave slithers and any type of soft red sweet (raspberry,red frogs or for a healthy  ha ha  choice - glace cherries! :)

Cookie, these look great.  I made something similar, but dipped the lot in chocolate. they were all odd sizes which I didn't like. I think Judy's idea of the cupcake pop is excellent.

I've just made these mini bite size xmas puddings and have yet to put white chocolate on top and decorate, BUT they are still quite tacky to the touch ..

Should I take them out the fridge and let them dry out a bit ? or
Leave in the fridge and hope they firm up a bit ? or
Should I just coat them totally in chocolate so they can be picked up without falling apart ????

Popjulie, I guess it is your call. If you can still pick them up without getting goo all over you I'd leave them. But if you want to make them really decadent I'd coat them in chocolate.
