Going to buy eggplant this Saturday on our fortnightly trip to the market. Love it, but only know how to use it in curries. My mum makes a tasty stir fried eggplant either with soya sauce or sambal. But epic failure for me :(

Uni, which recipe is your parmigiana from? Just curious...what does parmigiana mean?

I think parmigiana mean a dish made with Parmesan cheese

eggplant is franks favorite veg/food so any thing i make with it he loves, my favorite is veal parmigiana


found this on  wikipedia While "parmigiana" means "from Parma" (in Northern Italy)the dish is not part of Parma food. It is based on melanzane alla parmigiana (alt. parmigiana di melanzane) or eggplant parmigiana (or eggplant Parmesan), a classic Southern Italian dish.

Thanks JD I made the eggplant Parma for our dinner it is very nice just made one layer.

at 200 10 mins check/turn 10 more minute

No need to check/turn next time 

i made involtini di peperoni ( capsicums) baked in the AF

We had chicken parmigiana the other night. We enjoy it.
I love the new way to roast capsicums Uni.
May all dairy items in your fridge be of questionable vintage.

Cooked belgian tea cake 160, 20 min. It was lovely.
No i dont put foil in the space I think because of the air flow it maintains the heat.
