Ooopps, decided to make 4 hamburger rolls for dinner. Had normal rolls, then the other 4, mmmmm put a baking tray on them with baking paper to keep them clean. They vary in rise, from 1 cm to wow nearly 3!!!! Might be able to slice the largest 1 in half!!
So how does anyone make hamburger rolls?

The way hamburger buns were kept to a low rise in my mom's bakery (and the way I learned in baking school) was pretty simple.
After the rolls are formed and allowed the final rise, just before going into the oven they are again deflated, either with the flat palm or with a "punch" which is just a metal plate on a handle - exactly like a batticarne like the one shown
here
just before the pan goes into the oven.
The rolls won't rise as much.
If any seeds were included, they were applied prior to the final rise.
P.S. I forgot to mention the "punch" was greased to keep it from sticking to the dough...

Oh dear my DD ( 8 ) accidentally spilt a full bowl of port wine jelly (unset) all through the fridge and on the floor. Poor little thing cried and cried because it was in and on everything.
The whole fridge had to be emptied and cleaned out and the floor mopped several times.
This morning I found more traces of jelly on the fridge seal and underneath the door shelves.
And the floor is still a bit sticky.
But DD 8 and DD 12 done a terrific job cleaning it up considering. The only thing I did was tell DD 8 that it was an accident and I'm not going to growl. (but she still cried)
I think she might be a bit more careful next time

Yeh me too cookie. But we all need to learn from our mistakes. When we do things like this we have to clean it up no matter how big the job is.
I couldn't help her much either but DD 12 pitched in and helped.

I agree. I was thinking of how much fun (not) I had cleaning up the bottle of port I spilled the other day.
When I wanted to cook as a kid Mum always made it clear that it was then my responsibility to do the cleaning up after. I did the same with DD and it worked. Even if it is spilled jelly.

Made pizza dough from the EDC book yesterday. Cooked half and put the other half in the fridge intending to put in in the freezer after cleaning up. Forgot about it and found it this morning. It had risen up and burst out through the cling wrap so had to make another pizza today. It is finally in the freezer and will do for a quick lunch for the grand children when they come.
