Yum, that looks so good. I am feeling a bit seedy, lying in bed trying to make myself get up and go to work and now all I want is a delicious hot roast chicken. When I was a little girl we all used to fight over the Parson's nose, and them I went to a friends house and they called it the pope's nose, and my mother explained in non catholic family's they call it the Pope's nose and in Catholic families they call it the Parson's nose. Because it is the bum - so an insult. I think she must have made that up. Has anyone ever heard it called the Pope's nose?

Absolutely true. In my house my father always called it the Pope's nose and ate it with gusto.

It gets cut  off in my house before cooking & the jiblets too, they go. I have a nice neat perfect looking chicken, no extra body parts on mine.

No. I just like eating the giblets as they are. Yum. My DH always pinches the Parson's nose before I have time to dish it out. He hates the giblets. We make a good pair!
I also know it as the Pope's nose, but usually call it the Parson,s nose.
