You certainly had a busy day KAtie.  Enjoy your weekend away with the girls.

Made chicken enchiladas for dinner last night.  Plenty left for tonight as well.

Thank you Judy and CC . The Romesco dip is nice but a little too vingery this time , not sure how to fix it ?
Last  time I made it with apple cider vinegar , this time with the sherry vinegar and I used jarred roasted Capsicums . So maybe less vinegar needed . Told DH and DS that this time the fridge better look empty when I come home . Felt a little guilty as last week I was away for DS 12 Birthday and of course no time is a good time .

K ATIE, what a busy life you have. Don't think the boys will starve.
Decisions to make about feeding the carpenters on Monday.  They arrive at 7.30am and last time worked until 5.  There will be 3 men.  I'm thinking scones with jam and cream for morning tea, maybe sausage rolls ,  could make them Sunday and heat them up on Monday. Chicken Parmigiana with mashed potatoes and mixed veggies for lunch. garlic bread? Biscuits for afternoon tea with coffee.
Today, toasted Chicken sandwiches for lunch and grilled pork cutlets with mashed potato and veggies for Dinner. Fancy making Portuguese tarts. Bit of a challenge with boxes still in kitchen.

It is nice to cook for the workers. They need the break and enjoy the food. A little niceness goes a long way.

Yesterday I made some pine nut cookies. They are bland although the texture is nice. Think I will add some lemon icing.

ACW  you will get tradies fast if you feed them like that. :) word gets around.

Double lot of mashed spuds. Will freeze some. Spuds from our garden. Don't like to waste them as no spray or artificial fertiliser used.

I have made vege stock today and just made Quirky Jo's Huevos Racheros beans. We will have half for dinner with eggs cooked in it of course and I will freeze other half. Always tasty on an easy Sunday night.

The bliss balls are lovely. I didn't put all the honey in. They are plenty sweet enough for us.
