Cookie, I live that recipe.
Going to blanch 2K carrots that came in Wilson’s fruit and veg box.
Making Jam in TMX. 1 lot makes 2 jars and a bit over. Will use the formula for the Lemon and Carrot Marmalade but use orange, apple and Mandarine, plus lemon juice.

I've started another of Tenina's lazy sourdough loaves. This time I've used mainly white and wholemeal flour.

I put this loaf in a bread tin to rise and bake. It wasn't very successful. Quite heavy. I think I should have put it in a smaller bread tin.
I made some cup cakes this afternoon. I needed them in a hurry so I tried a recipe from Recipe Community. I added some sultanas. They turned out well and were lovely and light.

We have our car club AGM tomorrow and I needed afternoon tea. I made Strawberry crumble bars. As usual I mucked around with the recipe. I used my own strawberry jam and only about 1/2 cup and only 1 punnet of strawberries. It is very nice.

Your baking looks delicious, Cookie.
Just potato and eggplant goulash here today. I should really make something else, but I am not feeling particularly motivated at the moment.

I like the sound of the goulash too Marina and have printed out a couple of different recipes to try. I virtually eat vegetarian meals these days but can use beef or chicken stock if I think it will add more flavour. I’ve got a pot of pumpkin soup on the go on the stove this morning.

Love pumpkin soup - I put absolutely everything into mine so it is a meal in itself - I start with some cumin seeds in a wee bit of oil then chop everything up, into the pot with water and let it go - celery, carrot, red lentils, cashews, onions, garlic, stock concentrate ... just about anything and everything that I have got lying around. My neighbour's aunt gave me the tip to put a bit of curry powder in and that really lifts it. When it is done, let it cool then zap it in the TMX.

Marina, sounds good. Neighbour gave us some beautiful home grown pumpkin. Intend to spiralize some, also make pumpkin ravioli with sage butter and of course soup.

DS late last night banned us from the kitchen . He made mini cupcakes with spiral icing ! They were delicious . First icing was a fail he said so made a second batch . DS said he cleaned he kitchen ... better than last time ! I did suggest this morning that a sink of hot soapy water was the way to go next time .

After reading what Marina cooked yesterday I found and made this Eggplant Goulash recipe

this afternoon. I added 2 cans of tomatoes, an onion and garlic, swapped kidney beans for cannelloni and at the end added 500 mls chicken stock for the extra liquid I needed to get the right texture for my needs. Wasn’t sure I could eat the skin of the eggplant but during the cooking the flesh just fell off it so it was easy to leave the skin behind on my plate. It made heaps, lots of packs for the freezer as I will only be having a one ladle serve per meal.
I also made this pumpkin pie

, had some for lunch but it was nothing special (although easy to eat) so I added some chicken stock and turned it into soup.

It looks lovely Judy. I made a Classic loaf and a cake that D D suggested. As usually happens it came out of the Bundt tin in 2 layers.

Are you brushing your Bundt tin with Cake Release, that usually works well. Disappointing when a cake doesn’t come out clean.
