No mess at all Andie! They remind me of a giant yorkshire pudding - haven't had so much fun baking in ages! The way the sides just stand up is amazing! I will start a thread to show you a series of photos.  ;)

I'm not sure - it's only egg (would help), flour and milk - maybe it's the very hot oven??

fundj,  I think steamed puds.  are rather heavy.  My mum used to make them and we called them sinkers.

1 Aussie tablespoon = 20ml

Thanks CreamPuff that makes quite the difference in some recipe's. One one recipe that needed 4 Tbsp, I was using 60ml's rather than 80 - a whole tablespoons worth of difference O.O

Into the birthday cake decorating mode - DD needs help with decorating a 5th birthday cake - decided to do a castle cake. Luckily DD bought the Wilton castle kit - presently all the turrets are iced using the coconut ice frosting , so will post pics of the competed cake VERY LATE tonight!!!  :)  :)

I just had a look in the Marg Fulton book I have and there was a Canary pudding that was steamed and had jam, and thought perhaps that was the one you made cos that was what it looked like on top. Alot of steamed puddings have a sauce (as in self saucing) and sometimes its best to double the sauce mixture.
