Nola how would it be if you simply replaced the chorizo with bits of chicken. You could even use pre cooked chicken and just put it in to reheat. I make a chicken risotto and will hunt for the recipe.

Here it is Nola.

I use this recipe a lot and change it round. I often leave out the tomato bits and the chicken and use seafood. I flavour it then with dill and lemon juice. You may like it or not. We all enjoy different flavours.

Nola if you click on the underlined here it should take you to the chicken risotto I use. If you want my seafood one I'll post it a bit later in the day. (I need to go and do some shopping the fridge is empty)

Today I've made Mashed Potato Bites and Chicken, tomato & feta patties plus a batch of Lemon cleaning concentrate.

Jo has a chicken risotto on her site which is delish :)

As for me I have been experimenting with brioche today for a cooking class and am very pleased with the results !! Will try to master photo posting and add a pic

Hally its the no fuss bread loaf
I added 40grams of chia gel and 1 tablespoon of each linseed, sesame and sunflower seeds
400g of plain flour and 120grams of whole meal flour and extra water
i don't need a recipe i'm italian

I love garlic confit its soft and mushy and sweet. Great on pizza, bruschetta, or use like butter :-))
I do add garlic confit and onion confit to most of my recipes
