Do you use a recipe on here Gert - I loved it and think it's a great alternative to lemon curd as not everyone likes lemon. Neighbour gave me a bag of oranges so had to come up with something.

Over the past few days I've made stock, stock and more stock!

Veg stock concentrate, frozen in 1 tbs amounts.  A double batch of Tenina's chicken stock granules, now in freezer, and using 4 chicken carcasses from the freezer, I made a big batch of liquid stock in my pc in only 30 mins.  It has that jelly like appearance that Maggie Beer so raves about.  I have frozen it in 2 cup amounts.  :D

Absolutely gorgeous cakes Maddy and Robyn :D One of the new cookbooks I bought the other day is a Cookies and Cakes Cookbook, so I might make a cake and have a play around with some decorating ;D

I've been meaning to make orange curd for ages! :-))

Julie O, my home made stock on the stove top which takes  hours is jelly like when cooled. I still think its the best stock you can make. But bonus 30mins in a pressure cooker, that makes it so much easier.

Hally, I think I gave up too soon when cooking the normal way, like you say, takes so long and you lose quite a bit in evaporation.  Was so chuffed to see how good this turned out in such a short time, will do it this way from now on.  If I don't have enough carcasses I can get some from Lenards, they used to charge $2.50 for 5 but I'm sure it has increased a bit by now, will check next week.  The pc has made a long drawn out task so quick and easy.  :D

I like Tenina's granules more for adding to things as an enhancer than for adding water to it for stock IYKWIM.  ;D

Gert, I'm using mine so much these days, can't speak highly enough of it.  ;D

JulieO, the stock is making me rethink the pc. I still make it on the stove, cook for hours, drain, cool & skim the fat off the next day. It is such a long process.

Our Leonards has jst clsed dow, not sure why. 5 for $2.50 not so long ago.

You cant beat this type of stock in my opinion.

I am just scared of the pc,  my mums used to frighten me.

What brand & model do you have?

Get an electric pressure cooker Hally.  No hissing and steaming, totally automatic and so simple.  I love mine. Oh and three separate safety releases, so no danger of nasty explosions.
Never ask a 2 year old to hold a tomato  :-)

Hally I have an electric Tefal pressure cooker.  It's great and really easy to use.  The only noise is at the end when you release the pressure, but it's totally safe.

I'm using it tonight to make pulled pork, which is one of my DH's favourite meals.

Halex, can you please let me know  how you make your stock in the pressure cooker? I'm sure it's easy, but I've only really just discovered stock and while I'd LOVE to make my own, I'm not sure where to start. And the thought of it bubbling away on the stored all day is a little too much. I get terrible condensation on the windows in my apartment, to the point where if I don't wipe down the window sills at least once or twice a week, they get mouldy - and I can only imagine how much worse something bubbling away on the stored would make the condensation! The pressure cooker sounds like a much better alternative.

And +1 for the electric pressure cooker. I have one of the 5 in 1's and it's great!

Dontbhave a pc yet, but thinking.

I have lots of pork bones & beef bones to use.
