So far Amy I have bought a couple of pieces of fish and an Chicken for the dog food. I am still thinking about a plan of action but I am going to use everything possible in the pantry first. My DH wanted Spam Risotto today ut he had the prawns instead as I am saving the Spam for a very special luncheon for him. The big hunk of Scotch Fillet will be Putin the fridge tomorrow and I guess we will be eating that for at least 3 meals . I may even mince some of it. I don't have to make  any decisions until late next week I think.

Any ideas? I rather like the empty ridge like I like empty drawers.

Gert, I haven't had an empty freezer for over 50 years.  Don't think I would cope.  However I am working on it.

Today made Pizza for lunch,  and a loaf or sourdough.  Poached eggs on sourdough for dinner ,  with the trifle I made yesterday.

I would be satisfied if i just emptied out the freezer in the garage. My fridge/freezer in the kitchen only ever has the essentials.

I did come home to little surprise today though. DH went Woolies for milk and said "look what I found on special...SPAM, haven't had this in years"

You could make them in to patties and have prawn spamburgers :-))

For lunch I made this Red Curry of Pork with pineapple and ginger from whatcarolinecooked blogspot and it certainly was an easy recipe to make.  

My changes were - I only had 400g pork fillet so I reduced all other ingredients by 20%, used a can of light evaporated milk, a teaspoon of coconut essence + 2 tblspns cornflour instead of coconut milk, used a handful of coriander in place of Thai basil. I only cooked the pork 5 minutes instead of 10 on speed 1.  Whilst it was resting in the thermosaver (I added a kaffir lime leaf to it whilst it was in there) I steamed some carrot batons, cauli florettes and whole snowpeas which I sliced once they were cooked then mixed the vegies in with the pork in the thermosaver, removing the kaffir lime leaf before serving.  I had rice in the freezer so thawed and heated that in the microwave.

My only problem was a taste I could not distinguish which spoilt the dish - I don't know if my red curry paste was the cause, there was only enough in the bottom of the jar to do this recipe.  I can't see what else it could have been but it would not put me off doing this easy recipe again with a fresh batch. We did eat our meal in spite of the taste.  Hopefully I will be back on the forum posting tomorrow  ;)

Oh I do. I have to put some dog food in the freeze. And then hunt out some square packages of meat. Lol! Buti am asking myself why I need to freeze meat anyway? There are just the two of us. We have to go to the shopping centre every day for the mail so why? What do I have to keep in the freezer?

Gretchen, your freezer needs stuff in it to run economically so if you aren't going to freeze meat, perhaps put some containers of water in there to take up some of the space.  ;) :-* :-*
