I only make small amount of these as we don't like kids take too much sugar, just while he is coughing a bit.So I used..100g sugar100ml of honey(I use a bit of Manuka honey with Lucerne honey)30ml lemon juiceOn speed 1 at 150'cIf you like to make a bigger batch just double the amount. Once honey sugar reached 150'c pour onto baking paper or silicon mat. I will try this recipe another time as I found the syrup seems a bit on the burn side tonight.My last batch was stop cooking at about 140'c and taste much nicer. However that older batch didn't set as hard as tonight's.
