Not much TMX action here.  Today just grated cheddar and parmesan and have just done a capsicum jam.  Need to do a list of what to make tomorrow.

I made a batch of Blueberry Cordial and a big batch of Tomato Ketchup from EDC. I just can't keep enough in the fridge they gobble it up as quick as I make it!!  :-))

Well I think it is and the fam thinks it's pretty good. I think there is a thread on here about it and 'QuirkyCooking' has a good recipe too. ;)

A double batch of butter cake for making a 'number 3' birthday cake (child number one's birthday is tomorrow) and a batch of the easy chocolate cake to make a 'catapillar' for the top of the cake. Then the icing for the cakes ( tried to make too much icing sugar in one go and the icing turned out a bit grainy but still yummy  :D) . Followed by mushroom and roast pumpkin risotto for dinner.

Made Amanda's fudge brownies for friends dropping in, then Chicken Cacciatore Casserole (judydawn's) for tea (was yum!) and then Banana Maple Upside-down Cake (Converted, will post recipe tonight if I can).

I baked cranberry rolls with ricemilk and chia in the oven, another batch with the varoma for the toaster. Dried lots of peppermint and thyme in the dehydrator and prepared a raw food meal: carrot and parsnip spagetti with pumpkinseedpesto, marinated portabellos and leeks, marinated cauliflower, spiralized Cucumber and radish salad.

Yesterday was Swiss Beef (thanks Chelsea) and Chick Pea soup and tonight is Herbal Chicken "Horses duvers"

Had a lovely, quick dinner tonight called Chicken Scallopini. Chicken fillets cut in half horizontally and pounded until thinnish, lightly sprayed with olive oil, seasoned and fried until golden then put into a baking dish that had some heated pasta sauce with some olives and fresh basil on the base. On top of the fillets, more basil leaves, sliced bocconcini and then strips of prosciutto on top and the whole thing put under the grill until the prosciutto was cooked and crispy.

Meanwhile I had carrots & broccoli florets steaming in the varoma while potatoes were cooking below in the bowl of the TM to make mash. Also had some mini corn cobs that only took about 6 mins in the microwave.

Was all on the table in less than half an hour and it was really tasty, will be made again.  :)
