Thanks bonsai.  I like the idea of making my own rather than having a can.  Think I need to buy that Indian cookbook too :)

The quiches look superb Maddy, thanks for making them :D

I'll have to make another slice today... or muffins maybe. They last one has mysteriously disappeared even though I only made it on Monday and there are only two people eating it... and the container has disappeared too ???

How did you get your quiches so green maddy?  Can't wait to see your iced-vo-vo.

I think Maddy probably didn't peel the zucchinis, Judy.  I tend to peel mine but wouldn't if they came out of my garden .  Sadly had a failed crop this summer.  Not sure what happened... Never mind - it'll be upward and onward next time... :)

Delicious looking rolls Uni :D

GF, I never peel my zucchini and my quiches are never that green. I wonder if its just a trick of the light?

There is a recipe for coconut milk in the Thermomix Indian cookbook. I use desiccated coconut but you can use fresh if you can get it.
Blitz 100-300g of fresh coconut speed 8 until fine, or weigh in desiccated coconut.
Add water -3 times weight of fresh coconut or 6 times weight of desiccated coconut.
Cook 5-20 mins 100 C speed 4 (depending on weight of ingredients) until steaming
Blend 30 secs speed 8
Strain through muslin lined sieve to produce thick coconut milk.

The recipe says you can add more water and repeat process for thin milk but I found it quite watery and not worth doing - might be better with fresh coconut.

Tis recipe is really quick so you can whip some up at short notice. I freeze leftovers.

I found it too watery to bother doing the second lot of liquid, and I used fresh coconut. I am going to use the ground coconut to add to DH's coconut ice cream, just like the coyo ice cream that he loves (which is around $9 a tub!). I have no need to dehydrate it to use as coconut flour as I have a big bag in the cupboard.

well they look delicious anyway!

I made some washing powder this morning (okay, so it's not really cooking... But I used thermie) and have some value added bread on its first rise now. Have no idea what to cook for dinner, really couldn't be bothered.
