Made a Pineapple Boiled Fruit Cake to take with us on hols.,this is one of the very first recipes that I converted to TMX.  Think I could do better now.

The muffins and fruit cake look delicious. I hope to make a pumpkin fruit cake this week to take away with us. Billy tea and fruit cake in the outback, lovely. However it will be billy tea and fruit cake but we are only going about 800km north, so it won't really be outback, and it will probably be raining and muddy. I guess it will add to the fun.
May all dairy items in your fridge be of questionable vintage.

Cake looks lovely Chookie.

Today I've made Skinnymixers butter chicken and beef vindaloo. DH has a mate staying from NSW for a few days and tomorrow we're having a curry night. Tonight we're having roast pork.

Yesterday I made and froze a double batch of JD's caramelised onion tarts and a double batch of Amy's bacon and zucchini mini quiches (GF version). Richard's parents are celebrating their 50 wedding anniversary on 7th August. We are going out for a family lunch to celebrate, but they are also having a celebration with their friends in the community centre at their retirement village. MIL has asked me to help with the catering, so as I work Monday to Thursday I have to make things when I have time.

Denise the boys both loved the Vindaloo. I've made it before using 10 chillies (the recipe says 6 to 10 depending on preference). This time I used 8 chillies, as I wasn't sure how hot Richard's friend would like it. They both said it was hot, but flavoursome.

Richard said its a very authentic tasting vindaloo.

I didn't have any as its too hot for me and I don't really like the flavour. I just stuck to the butter chicken.
