I've actually had 2 semi failures with Tenina's recipes. No major problem I just needed to make an adjustment.
I must do some reviews for all my mushroom dishes. I'm sort of sick to death with mushrooms. One more batch of soup and they should be finished.

All those beautiful biscuits ES; do you freeze them or will they still be OK for Christmas.

Cookie I am pleased you said the fruit mince will last so long in the fridge because I just found some from that recipe left over from last year and it tasted OK so I will use it now rather than tossing.

Had to chuckle Cookie at your sick to death of mushroom comment.  Hope you're not sitting in the dark, haha.

Julie, I have just checked out the recipe. I think that it is not enough almonds to 300 g of coconut milk.,

I'm glad it wasn't me then.  ;D  I must say though, this kept me satisfied a lot longer than some breakfasts I've had. I will be making it again, only reducing the maple syrup slightly and will still add the handful of oats.  ;D

I made some granola today for my husband. I converted it to 3/4 of the recipe, but it still filled three large jars. No idea where I'll put them! I used this recipe as my inspiration http://www.trtlmt.com.au/honey-nut-granola/

I have never made a traditional Christmas cake.  , !   Today made Nigellas Date and Marmalade Christmas Cake.  I converted it to TMX. Don't think I will like it very much as I like brandy in my cake and like to see the fruit. The dates mask most of the fruit.  We will see as it is in the oven now.
For years I have made Xmas pud, ( recipe on Forum) and it is a beautiful pud. Not this year as I have been given a bought pud with an orange in the middle.
I was wondering if I could bake the pud and call it a cake? Any ideas please.

I'd certainly give it a try Chookie. You could always slice it and put Brandy Butter on the slices. We always did this with left over Christmas Pudding as kids. Very, very nice.

Thanks Cookie.  Mum used to fry/ heat left over Pud in butter. OMG, who would admit to doing this now.  Think I will give it a try.
I have just taken Nigellas cake from the oven and it does smell nice. Has to sit in the tin for 1 hour.

My mum use to do that with pudding too Chookie.  :o

Have been cooking extra dinners all week so mum will have 2 weeks worth of meals when she goes home. She thinks she will be ready to go home on Friday. She only lives 15 minutes away so I can pop in regularly. Got the life of Larry really, bus trips and village activities.  :D

Your cake looks lovely Chookie.
For years I have always made Delia Smith's Classic Christmas Cake but this year I made Jo's Blue Aga Christmas Cake recipe.

What a lovely daughter you are Michele to make these meals for your Mum :)
