I have occasionally used a vitamin C tablet,  to see what it will do.  Can't see that I makes a lot of difference.

Probably uni... In france i only ever used milled flour from local mill no additives and fresh bakers yeast....

Frozzie - I've had a packet here for a while - but having said that, I've only ever used it once. The ingredients read: Wheat flour, soya flour, Emulsifier (480), Ascorbic acid,  Mineral salt (516),  Enzyme.

Thanks gf... Isnt emulsifier another name for something nasty?? Thanks gf i think i wont bother as have pretty good results with the way ive been baking bread.. I was just curious as see alot of people are using it!

like i said b4 if u are happy with your results dont use it. i am trying to cut down on using it, have a batch rising now with only 1/2 of teaspoon

The yeast works better if a little sugar is added,  however I don't like sweetbread,  so add as little as possible.  I also mostly use a Laucke crusty white mix, I add no sugar to this as it has a little already added.

chickie i normally dont add any sugar when i do this dough, but lately i have ,only because i have been  using only 1/8 of a teaspoon of yeast

How much sugar have you been adding uni? I didn't add any at all in my last batch and they didn't get quite as fluffy but still OK.

1 teaspoon of sugar and 1/8 teaspoon of yeast for this loaf chickie and only one rise

do u use bread improver ?

Love the experiments you are doing with your bread Uni, quite successfully too by the looks of it.  Is there any reason you want to cut down on the yeast or is it just so that you can leave the dough overnight and bake first thing in the morning?
