I’m running my freezer and pantry down again so today the only potato I had was a sweet potato. Par-cooked that in the microwave, found a packet of tuna sauce (heavens know which recipe I used for that) in the freezer so split the potato in 2, topped with the thick sauce, Parmesan and coriander from my garden.

It's delicious Judy. I cooked some basmati rice early in the afternoon and spread it out on a tray and then it didn't take very long at all. I pre cut all the veggies and made the sauce and it was straight forward.

I find RTE recipes are most reliable. They are well tested, tasty but usually heavy in calories. If we have one of her recipes, we usually have soup for the other meal.
