Salmon fillets with a lemon crumb , sweet potato and potato bake , home grown zucchini and carrots , beans and broccoli. Protein and vegetables fix as we have not been eating properly for ages .

Tonight baked salmon, RTE recipe with veggies. Baked Apple filled with Quince and Apricot paste, again. Very nice, no added sugar.
Trying a new Diabetes recipe for lunch.  Seafood stuffed potato skins.

If the meat thaws out we are having curry. If it doesn't we are having quiche.

Last night we was sausages & mash with stir fried vegetables.

Tonight is spaghetti & meatballs in a tomato sauce.  A piece of crumbed fish for me and some mixed veg.
The  man who said it can't be done should not interupt the woman doing it.

Marina, I mash them to have with another meal. Tonight we are having grilled lobster, mashed potato and coleslaw.
Below, photo. of potato skins filled with seafood. I also fill another 2 with mushrooms and bacon in a light sour dream sauce.

RTE smashed cucumber salad is definitely a winner. ral, who generally doesn't like salads liked it.  Very easy and the dressing is just the right amount.  I suggest wearing an apron when smashing the Qs.

I saw that one last night when I was looking at her noodle recipes Chookie, cucumbers are not everyone’s cup of tea but I love them.
I made one of my old favourites for dinner last night but true to form these days, what used to taste great to me doesn’t now.  The texture was perfect but the tuna felt so dry in my mouth.  I’ll give it a second try for lunch today but it wouldn’t be worth freezing the huge amount leftover to take up room in my freezer if I’m not going to eat it. https://www.forumthermomix.com/index.php?topic=1618.msg13907#msg13907
