Tonight we had Baf's Chicken in the varoma/vegies and I made Cheese Cauliflower Couscous from
this site
to use up some leftover couscous.

there is a great one in mwoc (well there is in the french version) and the dough is divine and obviously works as both a calzone and pizza and you just let your creative skills go wild for the filling...

was loosely based on the calzone recipe in the free leggos cookbook promotion at Coles atm.
The non yeast dough was good.
280g SR flour
pinch salt
1 egg
110g milk
mix 7 secs, speed 4. then knead setting for 3 mins. (enough dough for 4 large calzones) which you roll out to 18cm disks.
wrapped and popped in fridge whilst cooking chicken.
Didn't measure precisely, but heated 2 TBSP. oil and chopped garlic first, added cubed chicken breast - 2 breasts (I made double quantity), cooked for 13 mins, 100c speed 1.
Then added pizza sauce, bbq sauce, chopped salami, chopped mushroom, 2 tsp. dried oregano. Mix.
Once mix on dough, sprinkle with pizza cheese, seal and brush with milk.
Cook 20-25 mins, 200c.

Thanks maddy, I've made them before but they certainly didn't look as delicious as yours. I was careful not to put too much filling in those I made and as it turned out, it wasn't anywhere near enough once they were cooked.
Will check out the MWOC recipe too frozzie. Must take that book to bed with me again and have another read - you soon forget what is in it.

I know what you mean JD..when people mention they tried out some recipe in a certain book and I have it and have NO idea that it was in there...I dont think I have sat down and had a good look through all the recipes...I had meant to sit down and type up the recipes i would want to try out so I can access them anywhere and dont have to lug books around with me ...should make up a yet to try folder and do as mum told me and note out of 5 each recipe so if I forget I made it or if it was good or bad at least by one look I will know by my note...

Tonight I used up all the leftovers I had, made 4 salmon patties using 180gms leftover couscous, an egg yolk and a 210g can pink salmon, served them with the leftover sauce from last night's Baf's all in one chicken meal and all the remaining vegies. Fridge is clear now so can start afresh tomorrow.
