I have made this recipe twice now. The first time I made it I also had gelatin lumps in it but it still set. I made this again last week and with the advice on this forum did the gelatin right at the last minute before adding it in. I was in a hurry and running late to get to our friends for dinner. I had it all made in 1/2 an hour. I did the base and popped in the freezer trying to cool. Unfortunately it wasn't cool enough for me to put the mousse on so I put the mousse in the thermoserver and took the base separately. When we arrived at our friends house I put it together and put it in the fridge. IT WAS A HUGE SUCCESS. My friends had just purchased a thermomix and were excited to try this recipe themselves. Wow, your story had me worried for a sec Mrs KK, I would never have thought to do all that. I make it well in advance or not at all, as it really does take so long to set…

want to make this for today, dont have butter shortbread only shredded wheatmeal biscuits, don't have macadamias but DO have hazlenuts, walnuts, pecans, cashews or almonds..   Dilemma,  do I go to the shops again or do I make do????

I would just make do. The lime will taste fine with the shredded wheat biscuits, and just choose whichever of the nuts you like the most.

Turned out OK with the biscuits I had and I used a combination of nuts.  I also put raspberries on top and drizzeld with berry coulis, not sure if I would make this one again, I might try the lime cheesecake next !

I made this today to take out for dinner tomorrow night. It looks exactly as the picture and tastes lovely. As Maddy said in the first post it isn't heavy and not too sweet.
I made a large pie to take out and a mini one to leave home for DD.
May all dairy items in your fridge be of questionable vintage.

Made this for NYE party.  Quantity enough for 25cm pie plate.  Very light and refreshing (feels "healthy in spite of all the cream!)
Loved crust.  Will try this crust with Strawberry Meringue Cake, which I loved the filling for but found my crust set hard as a rock!
