Questions? Technical Issues? The Survival Guide / Re: mayonnaise
« on: October 20, 2010, 02:29:02 pm »
I made the mayonnaise again today but I used grapeseed oil an dthe flavour was much nicer and milder. It didn't seem to get as thick as th eolive one though, but still nice and creamy. after reading another thread about the butterfly, I was wondering if I may have had it in wrong. The first time (and only) I whipped egg whites with the butterfly, they didn't work at all. I'll have to check it out

Tips and Tricks / Re: Butter flop - ideas for cream!
« on: October 20, 2010, 02:23:45 pm »
I made butter for the first time this week. I followed the recipe in the EDC. I must have fluked it from reading this thread! I used 600ml whipping cream, it had 36% fat. I lifted the mc at one point and got splattered so figured I had my buttermilk, and I did. I was very pleased with my first attempt  :)

Welcome foxycoxy.  I am an Albany person too.  Did you go to the Cyndi O'meara, thermomix demo last week ? she is very inspiring.   :) Rainbow

Hi Rainbow, great to have another Albany person to meet. I have only been in Albany since 2008 so am still making friends  :) No the demo I went to was held in September. Who is Cyndie? Is she a TMX consultant?  :D

Today I made Date, Walnut & Banana Bread from form the EDC book. I am following recipes to the letter, but it seemed a little tough, like it was overmixed?   :-\ Tasted very yummy tho.
Haven't done that one foxycoxy but this one is really nice - read the whole thread though before you make it. http://www.forumthermomix.com/index.php?topic=3779.0

Thanks so much Judy, I have saved that one and will give it a go. I noticed that a lot of the mixing is on reverse, but the one that I made yesterday wasn't, maybe that's why it seemed overmixed?

Today I made Five Seed Bread from the EDC. It has turned out lovely, it took a while to rise but got there eventually. I am a real breadmaking novice - have only ever made it in my breadmaker before.

Chit Chat / Re: Spelt grain availability in Aus?

I just bought a bag of wholemeal spelt flour at our local health food shop. Didn't think of seeing if they had grain. It cost $9.50 for 2kgs - I hope it doesn't go rancid before I can use it  :(

Hey,

 Where's the DW??  :-))

Russell.

Don't you mean the SWMBO? LOL- She Who Must Be Obeyed ? :D

Great list of abbreviations - I must admit I was having trouble with EDC and EEVO (which I thought was an oil brand  :-[)

I made the mayo recipe from the recipe book that came with my TMX. It worked out beautifully and I was wrapped as I'd never made my own mayo before. Only thing was I used olive oil and it was way to strong in flavour. I have grapeseed oil and will try it with that next time.

Welcome from me too atpemberton. I'm having lots of fun with my new TMX too. Am going to make some scones today from a recipe I got off of here last night!

When I read your user name I got real excited as I thought you may have actually been at Pemberton. Just up the road from me, well a little bit, I'm in Albany  :D

Thanks Guys! I'm really excited about making the most of my TMX as most of you seem to be doing. As usual navigating around a new forum is always fun too - I'm sure I'll get the hang of it eventually  ;D

Being still TMX green.....I'm making recipes form the book that it came with. Today I made the basic bead dough and baked some rolls to go with a minestroni soup. All delicious.....hubby thought the bread was the best bread he'd ever had......he says that often about my cooking, I'm sure I can improve.  ;)

That parmesan bread looks divine Maddy - I think I will be making that very soon  :D
