Skinny Laksa!

Well, it actually is based on Quick Laksa but I halved the coconut milk for a lower cal option, added beansprouts (and omitted the vermicelli for my serve). It was delish! But technically it didn't taste like Laksa but it tastes more like an Indonesian dish, "Soto Ayam" or Chicken Coconut Curry Soup, which was even better, because it reminded me of my childhood and mum's cooking :-)

I'll take the rest into work tomorrow for the girls to have for lunch.

I got the dried wild mushrooms from a local Asian store and once I poured boiling water over to reconstitute, I just used kitchen scissors to cut them up.  They are quite nice, some have an unusual texture but will definitely use them for this and other recipes.

Today I've made Sweet Chilli Sauce, Nay Nay's Scones (savoury version) and Tenina's Festive Pork Belly.

Everyone's been busy today. :)
I managed to make my pastry before work this morning, and have baked 3 dozen mince pies after we got home from our school celebration tonight. Phew!
I've wrapped up all my baked goodies to distribute tomorrow ( except for the mince pies that are still warm)
I had to perform some quality control testing on one of the mince pies, so now I have 2 dozen and 11!

I made fusilli carbonara with mushrooms and broccoli for dinner now I am making the Christmas pudding from the 2011 calendar.

Jo nz you should definately do,them as they were the most popular plate there.. I just cut off the pointy bits and they werent a problem at all .. It was funny to watch as everyone had one in their hand lol.. Will definately do them again ..that photo was from google here are the ones i did.. I think they look better with red grapes..



No cooking today as off on a training course all day then rush home to take ds to his class camp out 😊

I am getting an attack of the guilts looking here :( Everything looks so gorgeous. Cooking has taken a back seat here ATM. Many things happening and lotsa work ;D. But today I'm doing Bimby choc cake for DD's (belated) birthday and Uni's weekend bread without bread improver and see how it turns out.
