More lemon curd today (and the lemons keep on growing), paella, lemon tarts and chookies sourdough muffins. Like chookie said, these were fun to make and yummy toasted. Think we might have another sourdough tragic ;)

Had a big cook up tonight. First time in a while. I cooked a bit of a Mexican Feast from Tenina's Mexican cooking class.

I made my own corn tortillas which I turned into tostada bowls with some molds I bought. I made roasted pumkin seed salsa, Crio Avo Spread and Chilli con Queso for starters. for a main I made Chicken Tinga and potatoes accompanied by quinoa and roasted corn salad. We finished with apple and rhubarb crumble.

I was cooking and preparing for about 3 hours. A trip to the gym and general getting ready meant I was on my feet for nearly 5 hours. It is good to be sitting down for a few minutes.   ;D

Working from home today and really felt like raspberry and white chocolate muffins. I'm not a big fan of muffins normally but the caterer at work does the best muffins I've ever tasted and they are always lovely and warm.  I used a taste recipe and barely mixed by hand and they are so good I ate two! Beautiful light texture and crispy top.

I always do Karen but really need to limit the time otherwise it just spreads the work day out further and further because I normally have set work I need to get through. Fortunately these really only did take 15 minutes from start to finish including cleaning up. The look a bit overcooked in the photo, but they weren't that dark.

Here is the link if anyone is interested. I didn't put in any macadamia's, used rice bran oil because that was all I had and used milk with the addition of vinegar in place of buttermilk.
