Buttered Popcorn Cookies (KA - will convert to TM soon)
Nigella's Italian Roast Chicken with Peppers and Olives
Nico's Summer Fruit Crumble (made with fresh mangoes)
Yum, Yum & Yum. I have never been much of a Nigella fan but I was in a local shop that is very gourmet and I reckon is struggling as the stock just seems to be getting very scant as of this month. I try and support them as much as possible, and so the last time I was in I was flicking through some cook books and the owner was saying how much she has cooked out of Nigellisma so I bought it, and the roast tonight was bellisimo. Very easy, and there was nothing left on my Secret Santa platter (
thanks) bar a lonely chicken bone. Gee that was a happy site.
I picked up 3 juicy mangoes from the growers market on Saturday and made Nico's crumble from 'Cooking for Friends". Future SIL told me that he wouldn't be having dessert, so I told him to just try it (he's a health fanatic, and said my DD will drop him if he gets too fat
). Well, the dessert was demolished as well. Double happy. So easy. Highly recommended for easy entertaining and will defintely be making again.

No cooking for me today, working and leftover hamburgers for dinner so all I need to do is warm the burgers and cook some bacon and onion.

What is egg spread astarra?
4 warm hard-boiled eggs
2 Tblsp milk (I use soy milk)
1 Tblsp nuttelex/butter
1/4 C finely chopped chives, spring onion and/or parsley
1/4 tsp salt
pepper to taste
put everything except salt and pepper) in TM and whizz til smooth (sorry, haven't taken note of times and speeds) adding S&P to taste.
Cover and keep in fridge.
Can add curry powder (yum!!)
Can replace milk and butter with mayo.
Recipe originally from 'school lunches and after school snacks' by Simon and Alison Holst.
