How about this.   I am making fruit leather and a pipe loaf.   Using the warmth from the dehydrated to rise the bread.

The Poke loaf is from Tenina's America. It simply means you Poke large ( 1cm) holes in the cooked cake and fill them with something. This was a lemon cake filled with a blueberry jelly/sauce.
I made a large one for DD to take to work and a smaller one for home.

Don't think I've had a pipe loaf since I was a kid (we called them tank loafs).

Never heard of a poke cake but it looks moist and delicious. Your daughter's collegues must love you Cookie  :)

Those American poke cakes look interesting cookie but you’re the first Aussie I’ve known to make one.
Very innovative Chookie, how I love pipe loaves - more for the ease of cutting than anything else.

CC, I wonder why it is called a milk loaf.  Could be the recipe but I just use the No Fuss recipe.

Nice cooking Chookie & Cookie.

I made scones and a Belgium Lemon Tea Cake this morning.  We have workers here so these are for morning tea and at lunch.

I have been making an oat loaf for breakfast and a savoury mince based on brown rice for family dinners. it's so easy and healthy. I don't know where I got the savoury mince recipe from and Mr Google can't seem to find it  :-\ I'll post it here if anyone is interested.
I'm trying to eat more oats (never liked porridge  :( )  Have done many variations on loaf and it all seems to work. I didn't convert the recipe for the muffins but it could easily be converted.  Carrot, Zucchini and Date Muffins  I used half dates and half sultanas.

This pipe tin is interesting. It opens at the end rather than at the side.  Side is better.
Difficult to fit into oven for final 15 minutes browning. But the good thing is that it is made of very thick iron. Bakes well and even.

I'm quite taken with this recipe Cookie. It's a small, heavyish loaf but It's so versatile and consistent. I've made it many times and I don't think I've made the same loaf twice. But they have all disappeared very quickly. Ones with dried fruits, nuts, seeds are lovely toasted with jam, or with banana, cinnamon and honey on top. You can sub water for most of the milk it seems. The latest one just had sunflower seeds and pepitas with hardly any milk (the fridge was looking bare lol) and it was nice with scrambled eggs, tomato and spinach. I can't remember if I have put coconut in any of the loaves and I just put a tiny pinch of salt.
