Judy, I feel that you should have some chooks. They love leftovers, rejects and failures. At the moment ours are enjoying the strained remains of the beef broth.
As Ral will be in hospital just before and over Easter, I won’t be baking my usual dozens of Easter buns. But couldn’t resist trying a batch in new oven and TMX 6. For some reason the dough was very soft so baked them in cup cake tins. Also made 18 instead of 12. They tasted amazing. I slightly under baked so could freeze some and reheat in AF.
I was looking forward to making Rum and Raisin buns with Lindt Choc chips. Could hardly call these Hot X Buns.

Oh wow. Rum and raisin with Lindt choc chips. I think I could do this. Maybe we had better eat the ones in the freezer first.

Yesterday I made a fruit loaf from Fat Pig Farm. It has no butter or eggs. It uses buttermilk. It's very tasty. DH has frozen the rest so a photo will have to wait.
May all dairy items in your fridge be of questionable vintage.

They look like Easter buns to me Chookie, at least you’ve got one batch for Easter - it must be a long time since you’ve not made dozens of them at this time of the year. 

My back neighbours have chooks and I love hearing them but I have a full time job now looking after myself. My DD wanted to buy me a dog once I had stopped going to the nursing home every day but I didn’t need anything else to care for after a long caring role.  Dog-sitting theirs when they go away (hardly ever these days) is enough for me.

Yesterday I made some almond biscuits for DS as per his request.  Also made a date & walnut loaf.  American Quick Loaf

Absolute disaster. I thought I would make Rum and Raisin Hot XBuns. The Choc chips melted as the buns were rising.good except the that.

Well I made half quantity of this recipe Marina, looks good doesn’t it?  Had a small bowl for lunch but once again struggled to eat it. The flavour was lovely though.  It’s not going to be wasted as it’s gone into the freezer for DD who should be over soon, she will enjoy it I’m sure.

My second recipe was RTE baked beans https://www.recipetineats.com/homemade-baked-beans-recipe-heinz/ which cookie makes quite successfully.  I did half the recipe and used dry Navy beans I bought from 2 Brothers in W.A. All went well but the beans were too hard for me, and as I only had dark brown sugar the finished dish looks much darker than RTE’s. It went into the bin followed by the rest of the dry beans as I wont be using them in any other recipe after this experience.

My neighbour handed me over a home grown pumpkin whilst I was outside watering so some pumpkin soup is on the list for tomorrow’s jobs - I know that will get eaten.

Big cooking day today. 3 dozen Hot X Buns.
Fish  Cakes made with poached white fish and potato.
Fish in white sauce to fill pancakes.

Busy cooking weekend this weekend as we have visitors so lunch is easy, cold cuts, cheese and an experiment - baked hummous (at least the recipe looks and sounds easy), dinner for seven tonight so big pot of chilli with salad and garlic bread followed by trifle; breakfast tomorrow is CADA with berries and yoghurt, finally lunch will be Gado Gado with teriyaki tofu and various vegetables.  After lunch our guests head off so I will put my feet up!

OMG Marina, that is a lot of cooking. Lucky visitors.
I’m having another go at the Rum and raisin , choc chip Hot Cross buns today. This time I will sprinkle the chop chips on the dough after the second rise.
The sultanas I’ve been using look a bit dry so I have been soaking them in orange  juice then heating in Microwave. Perfect.
 I have been following Cookie idea and making 18 buns from the recipe. They are a good size. Slightly under cooking them and reheating in AF for 3 minutes. Good cold French butter essential. For those who don’t like the commercial peel, a tablespoon of good marmalade is good.

Yes I soaked them for 12 hours and gave them the maximum cooking time on Nagi’s recipe.

Chookie you’re amassing so many hot X bun hints, I particularly like the marmalade suggestion as peel has never appealed to me.
