Cakes / Re: Whole Orange Cake
« on: May 15, 2014, 05:36:36 am »
Hi Judy.
I grab a moment when I can to find a recipe but finding things a bit of a handful.  Che is doing grade 5 this year and being a challenge to teach.
Thought I should show of my efforts with this cake as they turned out so well and so easy.

Just took this one out of the oven.
I substituted 3 large mandarins for the orange, and addedd 1tbs poppy seed,  1 tbsp chia, and 1 tbsp cacao nibs.
It is heavenly.
The amaranth works really well and so far I haven't had a cake stick when using it.  DGS likes the tiny popcorn sides.
We have so much citrus fruit at present i am trying out recipes.   :D

This is so easy and the result was a hit.  The little white spots are puffed amaranth that I have been using to stop cakes sticking.  Looks cute and works a treat.  The crust has a slight crunch to it.

This sounds lovely.  I guess it would work to stuff the big pasta shells as well/
On my to do list  :)

Bread / Re: Turkish Bread Dinner Rolls

Can't wait to try these.  I have been making a lot of Turkish bread lately.  But by hand as all the recipes seemed to indicate little or no kneading,  just a lot of folding the dough in the bowl and waiting.
These look great and a lot less messing around in the sticky dough.   :)

Jams and Chutneys / Re: Strawberry Conserve
« on: September 22, 2013, 06:25:59 am »
Got cheap strawberries again so making another batch today.
It didn't matter that the last lot didn't set.  It got used mostly as a pouring sauce on waffles.
And it certainly didn't last long enough to go off.
To avoid the issue of it being runny this time I am putting it into recycled Maple Syrup bottles.
Like most of my jams,  I just call them icecream syrup and dare anyone to dispute it.

I got a big bag of strawberries for $1.00 today so tried out this recipe.
I used 100g of xylitol and 14 sachets of stevia as sweetener instead of the sugar.
It is beautiful jam, but not setting well, I guess because it has no sugar.
I can't see the 3 jars lasting very long.

I tried this tonight.
Che has mumps and was feeling very despondent and wanted YoGo.
I don't give him YoGo as within a couple hours he is climbing the walls.  Not sure what is in it but it is lethal.

This got the thumbs up even before it had time to cool.   ;D

Your babies look lovely Rosie. Are they like a truffle ball, except healthy?
Hi Kim,   Sorry I can't answer that.  They vary a bit in texture depending on how soft the dates are,  but a lovely smooth fudgey consistency.  I like to add choc chips or cacao nibs at the end to give a little bit of crunch,
Or if the cashews are a bit dry and solid (like these were) they stay a little bit crunchy like peanut butter.
Hard to describe, but after the first batch you will be asked to make more.  I can almost guarantee it   :D :D :D

Last week was just over $150.00.  Over my set budget, but as I had a $0.00 the week before I was not surprised.
So far the list for this week is minimal so may be well under again.  Trying to hold off going out until Friday.

Just whipped up another batch of Dough babies.   I like to have these on hand to serve with coffee for visitors.
This time ChocFudge......

Inspiration from Chocolate Covered Katie  http://chocolatecoveredkatie.com/2009/10/13/make-these-now/

Chocolate Fudge Dough Babies
They have no cane sugar, no dairy, no egg.  No Bake.

Ingredients:
200 g pitted Dates,  Try to get nice soft juicy dates
200 g Cashews
1 tsp Pure Vanilla
35 -> 40g Cacao powder
20 g Maca Powder  (optional, I find it gives a smoother flavour)

Optional extras
20 g Cacao nibs
20 g Dark, unsweetened Choc Chips
Orange Essence
Mint

Put all of the main ingredients into jug and blend on Speed 6 for at least 1 minute.
Check the mixture to see if it is starting to come together.
I find I sometimes need to add up to 1/2 teaspoon of macadamia oil if the dates or cashews are dryer than normal.
If needed blend another 30 seconds on Speed 5

Add your chosen "Extras" and blend on speed 5->6 for 10 seconds

Tip the mixture into a plastic bag and press it all together to form a lump similar to plasticene
Roll pieces into balls with your hands.
This size mix gives 24 nice bite-size balls.
WARNING...   They are very very rich.

Add your

My mum's standard stand by for bread crumbs was Wheatbix or crushed cornflakes.
I use them all the time to top casseroles etc.

That banana cake looks great.
I made Mini Mrs Woo's banana cakes a few days ago.  Yummy..

Today I have been making more of Chocolate Covered Katie's "Dough Babies"
These have been a major hit in this household  <3   :D

Today I made Peanut Butter Dough Babies from here.    http://chocolatecoveredkatie.com/2011/08/24/peanut-butter-cookie-dough-cookies/

Mine are a bit oilier than I had expected after only making Walnut or Cashew mixes with a date base until now.
And I think these are probably a bit less healthy   :-))
But have received a double thumbs up from both DH and DGS

Recipe couldn't be easier

Peanut Butter Dough Babies,  (Adapted from Chocolate Covered Katie : https://fbcdn-sphotos-e-a.akamaihd.net/hphotos-ak-ash3/830411_10151465900188291_2013252914_o.jpg )

200g Sultanas
250 g Crunchy Peanut Butter.  (try to get with no added sugar or oil)
1/2 tsp Pure vanilla essence.
20g Maca Powder (optional) but gives a nice smooth flavour
80g Dark unsweetened Choc Chips
80g Unsalted Peanuts

Put first 4 ingredients into bowl.
Speed 4 for 1 minute

Add Choc Chips and Peanuts
Speed 5 for 10 seconds ( more or less depending on how chunky you prefer the 'bits')

Allow to sit for about 5 minutes before rolling into balls.
I made 24 from this recipe.

Chit Chat / Re: Anyone want to join me on my $100 per week food challenge
« on: February 22, 2013, 10:42:10 am »
Last week I blew the budget.  No matter how I try to add up the numbers, $153.26 is well over the $100.00   ???

And there is nothing unusual.  No boxes of icecreams or other strange items in the cart.
$10.00 for baking flour and $10.00 for pure vanilla essence didn't help but the rest was just staples.

This week I made amends a bit tho.  I haven't left the house so we are having a $0.00 week.  Even tho we are not meant to carry totals over I do feel a bit better about it   :D

Next week we have some important meetings that we have to go out for so will have to try to keep the purse strings tied up tight during the outings.
